Ingredients

4  large   red potatoes with skins,  diced small

1  medium  onion,  chopped

1  medium  fresh green pepper,  chopped small

1/2  medium   red bell pepper,   chopped

4  tablespoons  vegetable oil

salt and pepper to taste

1. Place chopped potatoes in a microwave safe bowl or plate. Cover and microwave on high for about 8 minutes or until potatoes start to feel soft and moist, mixing and checking ever couple of minutes to get a even cooking of the potatoes. Add onions and peppers and microwave for another 2 minutes.

 


2. In large skillet or griddle heat up oil on high, add potato mixture spreading potatoes to form one layer. Cook until potatoes crisp on all sides, turning and mixing. About 20 minutes.

 

Serve potatoes crispy and pippin hot.

       Vegetables
