  Green Beans & Sun Dried Tomatoes

Ingredients

Preparation

1  pound  fresh green beans, cleaned and snapped

1  teaspoon   baking soda, to boiling water for beans,  see note (1)

2  ounces  sun dried tomatoes, about 1/3 cup,  cut in strips

1  clove   garlic,  chopped fine

extra virgin olive oil, salt, pepper

1. In small bowl place dried tomato strips in 1/2 cup of very hot water, let soak for about 20 minutes.

 

2. Cook green beans al dente by placing them in boiling  salted water for about 8 to 10 minutes. You may cook beans using a microwave oven.

 

3. In large skillet heat olive oil. Add drained sun dried tomatoes and garlic. Cook for about 2 to 3 minutes. Tomatoes will make olive oil somehow red. Add drained green beans and cook for about 5 to 10 minutes tossing and mixing to coat and warm evenly. Season with salt and pepper to taste.

NOTE: 1)  Baking soda in the boiling water makes beans retain a it's  bright green color.

As a Salad: add some red wine vinegar and serve  room temperature
