Tips: Great under chicken breast or with roasts.

  Flavored Mash Potatoes

Garlic or Spinach

Ingredients

Preparation

4  medium   red potatoes

1  tablespoon canola oil

1  cup  heavy cream

4  tablespoons  butter

salt and freshly ground black pepper

     

2  tablespoons  finely chopped garlic

     

10   ounces  fresh spinach, cleaned and dry

1/2  cup  freshly grated Parmesan cheese, optional

In a Large saucepan, combine potatoes with enough water to cover and salt lightly.

Bring to a boil over high heat and cook until the tip o a knife inserted into the potatoes meets no resistance, 30 to 40 minutes.

 

For Garlic Potatoes:

1.  Meanwhile, heat a medium saucepan over medium heat. Add the oil and swirl to coat the bottom of the pan. When the oil shimmers, add the garlic and saute, stirring, until golden, about 2 minutes. Add the cream and reduce by one-third over low heat, about 12 minutes.

2. Transfer the potatoes to a large bowl. Add the cream mixture. Using a potato masher and wooden spoon whip the potatoes until smooth. Fold in the butter, season with salt and pepper. Serve immediately.

 

For Spinach Potatoes:

1. Meanwhile, heat a medium saucepan over medium heat. Add the oil and swirl to coat the bottom of the pan. When the oil shimmers, omit garlic. Add the fresh spinach and stir until all spinach wilts, few minutes.

 

Option A: remove spinach, reserve and proceed , adding the spinach to the cream after been reduced. Spinach will remain in pieces

 

Option B: place spinach in blender with 1/4 cup milk and blend. This will render a green  color mash potato dish.

 

Continue as in per Garlic Potatoes. Add Parmesan cheese if desired, mix to incorporate with wooden spoon.
