Chili - Red
Thick "Superbowl Sunday" special
Ingredients

2 dry ancho or pasilla peppers, vinegar & water
1 tablespoon olive oil
8 ounces ground beef (2 hamburger patties)
3 cloves garlic, minced
3 small onions, minced
2 bay leaf
3 tablespoons chili powder
28 ounces crushed tomatoes, canned
15 ounces red kidney beans, canned
15 ounces dark kidney beans, canned
1/8 teaspoon red crushed peppers
2 stalks celery, chopped
2 teaspoons salt
1/2 cup water
1. Under running water over the sink remove seeds and stems from dried peppers. In small pot place pepper skins, 1/2 cup water and 1 Tablespoon of vinegar. Boil partially cover until skins are soft, about 10 minutes. Blend skins and liquid to a paste.
2. In a large pot, heat olive oil and brown ground beef for about 10 minutes .
Add vegetables and saute for about 5 minutes. Add spices, blended pepper paste and all other remaining ingredients except beans. Simmer partially cover for about 1 hour. Add beans and simmer for a additional hour.
3. Serve with grated cheddar cheese, chopped fresh tomatoes and onions.
