Crab Cakes
Eastern-Shore Style
Ingredients
Preparation
1 pound fresh crab
1 egg, beaten
1 hard cooked egg, chopped
salt and pepper to taste
1/3 cup melted butter
1 Tablespoon lemon juice
1 Tablespoon Worcestershire sauce
1 teaspoon Tabasco sauce
1/2 cup Panko bread crumbs or Soft bread crumbs
Butter for frying
Combine crab meat, eggs, salt and pepper, butter, lemon juice and sauces.
Add just enough bread crumbs to hold shape.
Shape into small cakes
Fry crab cakes slowly on each side in butter until browned.
NOTE: Hearty appetizer, great in cold weather.
