Bechamel Sauce

Ingredients

4 tablespoons butter
1/4 cup unsifted flour
2 cups milk or 1 cup milk + 1 cup broth, see note (1)
1/2 teaspoon salt
1/8 teaspoon white pepper
1 pinch nutmeg
1/4 bay leaf
1 pinch dried thyme
1. In medium sauce pan, heat butter and flour, do not brown.
2. Slowly add milk stirring briskly to prevent lumps. Add spices and cook stirring over medium heat until it thickens.
3. Adjust thickness by adding more liquid or cooking longer, depending on the use.
NOTE: 1) Use chicken broth, fish stock or vegetable stock depending on the sauce use.
