Loran's Tomato Basil Salad
Ingredients

4 medium ripe tomatoes
1 large ripe avocado
1/2 pound fresh mozzarella cheese or similar, see note (1)
2 tablespoons fresh basil leaves, chopped in thin strips
4 tablespoons extra virgin olive oil, approximately
salt and pepper, to taste
1. Cut tomatoes into 1/4-inch slices.
2. Cut mozzarella or fresh cheese into about 1/4-inch round slices
3. Peel and slice avocado into strips.
To assemble: in a shallow platter, place rounds of tomatoes follow by cheese rounds slightly off center followed by avocado slices and continue forming a circle wreath around the plate. Make a second wreath in the center of the platter until all ingredients are used. Sprinkle with the fresh Basil strips, drizzle with the olive oil and season with salt and pepper.
Serve at room temperature
If prepared ahead, refrigerate until about 20 minutes before serving. Do not drizzle the olive oil until time to serve. Olive oil will become solid in the refrigerator and have a bad appearance.
NOTE: 1) Depending on availability, use a cheese of fresh consistency but a bit more flavor than fresh mozzarella.
