  Pizza with Seafood

Ingredients

1 crust   Pizza Dough- Basic,   see recipe

     

1  cup  sauce, Pizza - Master (uncooked type),  see recipe

12  medium   raw shrimp,  remove shells

4  ounces  shredded mozzarella cheese (1 cup)

2  ounces  shredded provolone cheese  (1/2 cup)

8  flat  fillets of anchovy in oil

1/2  pound  bay scallops

1/2  cup  fresh basil leaves

1/2  teaspoon  pepper

4  cloves  garlic,  finely chopped

1. Prepare pizza dough for 1(12-inch) crust and sauce as  indicated in  reference recipes.

 

2. Place oven rack in lowest position of oven. Heat oven to 500 F degrees.

 

3. Press or roll dough into 12-inch circle on lightly floured surface. Place on ungreased pizza screen or in 12-inch  pizza pan dusted generously with coarse cornmeal of flour. Press dough from center to edge so edge is thicker than center.

 

4. Spread pizza sauce over dough to within 1/2 inch of edge. Mix cheeses; sprinkle over sauce. Place shrimp, fillets of anchovy and scallops on cheeses. Mix basil, pepper and garlic; sprinkle over seafood.

 

5. Bake about 10 minutes or until seafood is done and cheeses melted.

NOTE: If using pizza stone, place dough in cookie sheet sprinkle with cornmeal and cookie sheet on stone. Slide pizza into stone if possible.

 Makes one 12" pizza, servings for 2.
