1  pound   puff pastry,  about 1/2 cm. thick

1/2  cup   sugar per pound of dough,  approximately

Pre-heat oven at 375 F degrees. Place baking rack at middle position. If baking stone available it may be place at a level lower than baking rack, see note 1. Do not bake pastries directly on top of stone.

 

1. In lightly floured surface, place puff pastry and roll to about 1/2 cm. thick:

    - If using  home made "3 minute Puff Pastry", 1 recipe = 2 lbs.  rolled to 18"x22" approximately.

 

    - If using commercial pastry, usually 1 lb = 2 (9"x9"), about 1/8" thick. Unfold pastry sheets only.

 

2. Sprinkle sugar generously on top of dough sheets, about 1/2 cup sugar PER pound of dough.  Gently press sugar into dough using a rolling pin to make sugar stick.

 

3. Using a pizza cutter or a sharp knife cut into 3" squares, then each square into 2 triangles. Carefully place triangles in  regular or air cookie sheets covered with Teflon non-stick sheet, be careful not to spill the sugar.Teflon sheets aid to cook multiple batches without rinsing sheet, but if not available, place directly on sheet, no greasing necessary.

 

  - DO NOT attempt to do anything else while baking this pastries or you will end up with a burned batch.

 

4. Bake in middle rack at 375 F  degrees for about 15 minutes or until the pastries have puffed and the dough looks cooked. The tops should be slightly golden, the sugar not yet caramelized. Quickly place pastries under broiler for few seconds to caramelized the top sugar. Remove immediately to a cooling rack. Caramelized sugar is extremely hot. Do not taste pastries right out of the oven. Allow to cool and harden for few minutes before eating.

 

Pastries are very light and crisp.

NOTE: 1) If your oven produces hot spots from the bottom, baking stone may prevent pastries from getting to dark below heating element.

2)  Pastries do not save well in humid climate. Pastries may be kept in a glass jar for few days but ar best consumed the same day.
