Pork with Zucchini Mexican Style

2 1/2 pounds lean pork chunks in 1.5" cubes
2 tablespoons vegetable oil
1 small yellow onion, chopped
16 ounces can crushed tomatoes
1 fresh jalapeƱo pepper, sliced
1 cup water approximately
salt and pepper to taste
3 small fresh zucchini in 3/4" chunks
1 cup frozen corn
1. In large heavy pot heat vegetable oil. Sprinkle pork pieces with salt and pepper. Add pork pieces to hot oil and brown for about 5 to 10 minutes turning to brown all sides
.
2. Drain fat if excessive drippings, leaving about 1 to 2 tablespoons of the drippings. Add onions and cook for 5 minutes until onions are transparent.Add crushed tomatoes, water and the sliced jalapeno pepper. Bring to a slow boil. Partially cover and simmer for about to hours or until pork pieces are soft. Check water/sauce level, if too dry, add some water. Sauce should be thick but not sticking. Zucchini will add more liquid when added.
3. About 30 minutes before serving, add zucchini pieces and corn, simmer for about 30 minutes or until zucchini is soft.
