1 cup flour
1/2 teaspoon cinnamon
1 cup boiling water
1/2 teaspoon salt
1 egg
1 slice bread (to test oil temperature)
1 1/2" slice lemon
oil to fry
powdered sugar or cinnamon/sugar to dust
1. In a medium-size bowl, sift the flour and cinnamon four time.
2. Boil water and salt and our all at once over flour mixture, stirring vigorously until batter is fluffy. Add egg and continue beating until mixture is shiny.
3. Place bread and lemon slice in one-inch oil in skillet. Heat to 360F degrees or until bread is golden brown. 4. Remove bread and lemon.
5. Place batter into a pastry tube with a large star-tip and drop four-inch pieces in oil. Fry until golden brown. 6. Remove and drain on absorbent paper towels. Sift powder sugar over churros, or roll while warm in mixture or granulated sugar and powder cinnamon.
Serve immediately while they are still warm.
NOTE: 1) The slice of bread is used just to test oil temperature. When the bread turns golden brown, the hot oil is just the right temperature to drop the churros into.
