Pork Roast - Coca Cola
Ingredients

2 to 3 pound Pork Roast with bone, loin preferred
8 to 12 ounces Coca Cola drink, not sugar free
2 tablespoons vegetable oil
salt and pepper
1. In large skillet heat oil. Season roast with salt and pepper. Under high heat brown roast in all sides or place in the oven under broiler to brown for about 15 minutes turning to cover all sides. Set aside.
2. Heat oven to 350 F degrees . Place roast in oven proof plate. Baste with Coca cola, start with 8 ounces and increase as juices evaporate as needed. Sugar from Coca cola will produce a rich brown sauce. Do not allow liquids to burn in the bottom of the pan or gravy will be lost. Bake for about 2-3 hours, until roast is tender and juices dark brown.
Serve hot scraping all juices out of the bottom of pan to serve as sauce. Sauce should be dark in color but runny, remove if necessary.
VARIATIONS:
CHIPOTLE marinade: see "Sauces" in Mexican section for marinade recipe. Cover the roast with slightly thick marinade and baste throughout baking.
APRICOT, CRAN-APRICOT, PEACH nectar marinade: replace Coca cola for nectar of choice. If a sweet sauce is desire add few tablespoons of brown sugar to nectar. Baste throughout baking.
NOTE: Coca Cola drinks vary in their formula in different countries or regions. If liquid fails to brown and looks very watery you may add some 1 to 2 tablespoons of brown sugar, sugar "lump" ( found in Chinese markets) or piloncillo (found in latin-mexican food) stores.
