Pork Chops Smoked
in Tomato Sauce

12 smoked pork chops or 2 cans Spam
4 to 6 red potatoes, sliced 1/3" thick
2 fresh green peppers, sliced
2 large onions, sliced thick
6 to 8 large fresh tomatoes, chopped
2 cloves garlic, chopped
4 tablespoons vegetable oil
1 small can of V-8 juice or tomato juice, optional
1. In large skillet or pot that will accommodate all ingredients, heat oil. Over high heat fry potato slices one layer at a time to brown in both sides. Remove slices and continue until all slices are browned.
2. If Spam is use, slice Spam into 1/3" thick slices.
3. In hot skillet fry each Spam slices or smoked pork chops, both sides, about 5 minutes to brown, remove.
4. Brown onions and peppers for about 5 minutes. Add chopped garlic and tomatoes, reduce heat to medium and bring to a slow boil. Mix to incorporate vegetables and cook cover until tomatoes form a sauce, about 30 minutes.
5. Add potato slices to the sauce placing them in between the sauce so the moisture helps them cook. Cover and simmer for about 30 minutes or until potatoes are tender and sauce thickens. If not enough liquid add a small can of V-8 juice or tomato juice, pork chops or Spam will add liquid to the sauce when added, so don't make the sauce too thin.
6. Incorporate chops or Spam slices into the sauce and simmer uncovered until the meat is heated throughout and the flavors combined.
Serve hot.
NOTE: Depending on pork chops' size and persons' appetite you may consider ONE or TWO pork chops per person.
