Pork - Carnitas
Mexican Style Pork
Ingredients
Preparation
2 pounds boneless pork meat, cut in large chunks
4 ounces milk
4 ounces water
1/4 cup lard, shortening or pork fat trimmings
1 pinch salt
* Red or Green sauce to serve with.
VARIATION: ADOBO SAUCE
4 red ancho or pasilla peppers, dried
8 cascabel peppers, dried
1 cup vinegar (1/4 liter), adjust to taste
1 small onion, chopped
salt, pepper, oregano, cumin to taste
1. In a heavy pot place all ingredients and bring to boil on top of stove. Continue simmering at medium heat until the liquids diminish, stirring now and then to prevent meat to stick to bottom. Meat should cook for 2 - 3 hrs. until liquids are completely gone and meat slightly crisp and tender.
2. Serve with preferred sauce such as "pico de gallo", " tomatillo sauce" or "cilantro sauce".
3. Essential complements to this traditional northern Mexico meal are: avocados or guacamole, beans, rice and flour or corn tortillas.
VARIATIONS: "Asado de Puerco en Adobo sauce" .
Replace milk and water for Adobo sauce:
For the sauce:
1. Remove stems and seeds from dried peppers. Place pepper skins in saucepan adding enough water to cover. Bring to boil, lower heat and simmer for 5 minutes. Allow to cool for about 20 minutes and soften peppers.
2. Add remaining ingredients EXCEPT vinegar. Using blender, puree with just enough water to produce a thin paste.
Brown pork pieces in lard or shortening. Add puree and vinegar and simmer for 2-3 hours at low heat or until meat is tender.
Serve hot decorated with sliced onions.
