Chicken Breasts Stuffed
with Ham and Swiss Cheese

4 chicken breast halves, skinned, bones removed
4 slices ham, thin
4 slices Swiss cheese
salt and pepper
1 cup plain bread crumbs
1/2 cup flour (about)
1 whole raw egg
vegetable oil to fry
1. To each chicken breast half: pound flat, slicing a layer open if to uneven in thickness. Place a slice of ham on top of open breast, top with a slice of Swiss cheese. Roll tight and secure with a tooth pick.
2. Dredge rolls with flour, then in beaten raw egg and finally in bread crumbs to completely coat.
3. In a large pan, heat oil to cover about 1/2 of rolls. Place rolls in hot oil , cook at high heat for few minutes to brown one side, decrease heat and cook slowly until chicken show signs of been cooked about half way through. Turn rolls, increase heat for few minutes again to brown, then reduce heat and cook until cooked through, this should take about 15 to 20 minutes.
4. Drain in paper towels and serve.
