1 whole chicken, cut up into parts, remove skins
salt, about 3 tablespoons
1/2 cup soy sauce
2 tablespoons sugar
1 star anise or anise seeds (2 tsp.), see note (1)
wild peppers (optional)
water to cover chicken
1. Cut chicken into major parts: legs, thighs, wings and whole breast. Sprinkle all chicken parts with salt and refrigerate for 2 days.
2. In large pot heat water to a boil. Add chicken parts and boil for 2 minutes. Rinse chicken parts in cool water and reserve.
3. In large pot heat soy sauce, sugar, star anise or seeds and enough water to cover chicken parts. When boiling add chicken parts and simmer for 20 minutes. Remove chicken.
4. Drain and refrigerate to cool. Chop with cleaver into about 1-inch thick pieces.
Serve cold or room temperature.
NOTE: 1) Star anise in found in oriental markets if not available substitute with anise seeds.
2) You may save cooking liquid in freezer for future use.
