  Mostaccioli with Sun Dried Tomatoes

"Bowtie" Pasta

Ingredients

Preparation

1/4  cup   olive oil

3 cloves   garlic, minced

2 teaspoons dried basil

10  sun-dried tomatoes soaked in hot water, 10 minutes

2  tablespoons  tomato paste

12  ounces  Mostaccioli pasta, cooked al dente

1/4  cup  Parmesan cheese, grated

Preheat oven to 250 F degrees.

1. In heavy skillet big enough to toss pasta and dressing, heat olive oil for 2-3 minutes, add Garlic, Basil and  sun-dried tomatoes drained and cut in halves. Stir for few minutes. Add Tomato paste and continue to stir until oil turns reddish color.

 

2. Toss cooked pasta into dressing. Transfer to  preheated ovenproof plate and cover with fresh grated Parmesan Cheese. Place in warmed  oven for 5- 10 minutes to warm up and soften the cheese.


VARIATION:  Saute fresh  green or red pepper slices,  onion slices, mushrooms slices etc. in heated oil as indicated in step one. Remove from skillet and add to cooked pasta.  Add 2 fresh Mozzarella balls  cut in 1/4 inch chunks while tossing of pasta before placing dish in the oven.
