  Fresh Berry Jam Filling

Ingredients

2 cups  fresh berries: one type or mix. Crushed

1 cup  sugar

1 to 2  tablespoons fresh lemon juice

1. Stir the berries and sugar together in a large microwave safe bowl.

2. Put the bowl in a microwave oven set at full power and cook for 10 minutes. Stir the mixture and cook for 5 to 8 minutes longer, or until most of the liquid has been absorbed and the filling is glossy.

3. Stir in the lemon juice. Scrape the filling into a small container and cool to room temperature. Seal the container and chill.

 

The filling will keep in the refrigerator for up to 1 week.

NOTE: Makes 2 cups
