  Filling for Danish Pastries

Cheese or Pecan/Coconut

Ingredients

Preparation

Cheese filling: (makes 1/2 cup)

4 oz  cream cheese

2 Tbsp.  sweet or heavy cream, such a Mexican style

1 egg yolk

1/2  tablespoon  flour

1/4  teaspoon vanilla extract

1/4  teaspoon lemon zest, finely grated

1/8  cup  granulated sugar  (1 oz)

1 to 1/2 Tbsp  butter, adjust to consistency


Pecan/ Coconut filling: (makes  1 1/2 cup)

1  cup  ground nuts such as pecans

1/2  cup granulated sugar (4 oz)

1/2  cup  light brown sugar

2  oz  unsalted butter ( 1/2 stick = 4 Tbsp)

2 tablespoons  flour

1  egg

1/3  to 1/2  sweetened coconut shreds or flakes

Cheese filling:

1.  In a small bowl, mix softened cream cheese and cream. Add egg yolk and incorporate. Add remaining ingredients leaving butter at the end. Adjust consistency by adding more or less butter. Filling should be soft but not runny.

Use as center filling for Cheese danish pastries using Danish Pastry dough.

 

Pecan/Coconut filling:

1. In a small bowl, place softened butter and sugars. Mix thoroughly. Add egg and incorporate. Add remaining ingredients and mix into a paste.

Use as filling for Bear Paw pastries using Danish pastry dough.

NOTE: fillings may be kept refrigerated or frozen for few weeks.

 Each filling recipe makes enough for at least a dozen pastries, depending on the size and amount you prefer.
