Makes; Plenty for topping a 10 inch cheese cake

Tips: Prepare ahead and refrigerate ready to use.

  Blueberry Topping

For Cheese Cake or Pastries

  2 pints (4 cups) fresh blueberries, divide in two.

  2/3 cups of sugar

  4 Tablespoons corn starch

  1/2 cup water

  4 Tablespoons lemon juice

  1. 1.In a saucepan, place sugar and cornstarch. Mix well. Add 1/2 cup water and lemon juice. Mix in 2 cups of the fresh blueberries.

  2. 2.Cook stirring until boiling. Boil for 2 minutes or until thicken, jelly like and that most of the berries have popped.

  3. 3.Turn heat off. Add the 2 cups of blueberries remaining. Stir to mix and cover until cool.

  4. 4.Make sure topping is cool enough before spreading on a cheese cake. If necessary refrigerate for a while before topping cake.

  5. 5.Keep refrigerated.

NOTE: You may keep topping refrigerated and add to cake as you serve slices, topping makes cake very rich.
