Ingredients

1 1/2  cups  sugar

1/2  cup  butter (4 oz = 1 stick), softened

1  teaspoon  vanilla

2  eggs

2 3/4  cups  all-purpose or unbleached flour

1  teaspoon  cream of tartar OR 1/2 tsp. baking powder,  see note (1)

1/2  teaspoon  baking soda

1/4  teaspoon  salt

2  tablespoons  sugar

2  teaspoons  powder cinnamon

1. Heat oven to 400 F degrees.

2.  In large bowl, beat 1 1/2 cups sugar and  butter until light and fluffy. Add vanilla and eggs; beat well.

3. Lightly spoon flour into measuring cup; level off.

4. Add flour, cream of tartar, baking soda and salt to butter mixture; mix well.

5. In small bowl, combine 2 tablespoons sugar and cinnamon.

6. Shape dough into 1-inch balls; roll balls in sugar-cinnamon mixture. Place 2-inches apart onto ungreased cookie sheets.

7. Bake at 400 F degrees for 8 to 10 minutes or until set, do not overbake, they harden as they cool. Immediately remove from cookie sheets.

 


CHOCOLATE variation: One- half cup unsweetened cocoa can be substituted for 1/2 cup of all purpose flour. Shape  dough into 3/4-inch balls. Bake at 400 F degrees for 6 to 9 minutes or until set.

Makes 5 1/2 dozen cookies

NOTES : 1)  Using baking powder makes a puffed  round cookie as in the recipe picture. Using cream of tartar, the cookie will most likely flatten as it cools off ( bottom picture).
