8 ounces butter (1 cup = 2 sticks)
1/2 cup powdered sugar
1/2 teaspoon salt
2 teaspoons vanilla extract
2 1/4 cups flour
1/2 cup corn starch
sugar-cinnamon, to coat only
Preheat oven to 325 F degrees. Lightly grease cookies sheets.
1. Mix using hand or mixer combine: butter, sugar, salt and vanilla. Add flour and corn starch. Mix until well incorporated.
2. Wrap in plastic and refrigerate about 1/2 hour.
3. Roll the dough to 1/2 centimeter thick. Using cookie cutters, cut circles, stars, Christmas shapes etc. as desired. Small 1"- 1.5" circles work well. Shapes with skinny parts may break easily.
4. Place in lightly greased cookie sheet. Cookies do not expand during baking.
5. Bake at 325 F degrees until they start to show a slight toasted color. Do not brown, about 15-20 minutes depending on size and thickness.
6. Roll cookies in sugar - cinnamon mixture as soon as they can be handle tossing few at a time in a large bowl. Careful not to break them as they are very fragile. Arrange in racks to cool completely before storing in airtight containers.
NOTES : 1) Cookies may be coated in powdered sugar instead of sugar-cinnamon.
Makes about 36 cookies 1.5" circles.
