1 cup flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/8 teaspoon salt
4 ounces butter (1 stick), softened
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
1 egg
1 teaspoon vanilla extract
1 cup quick cooking rolled oats
1 cup ready to eat crisp rice cereal
1/2 cup flaked coconut
1. In a bowl stir together flour, baking soda, baking powder, and salt to combine thoroughly; set aside.
2. Preheat oven to 375 F degrees. Grease cookie sheets. In mixer bowl combine butter and sugar. Beat until fluffy and well blended; beat in egg. Add vanilla and mix well.
3. Gradually add flour mixture until just blended. Stir in rolled oats, rice cereal and coconut.
4. Drop by rounded teaspoons, placed slightly apart, onto lightly greased or nonstick baking sheets. Bake until cookies are golden brown (about 10 minutes). Remove at once to wire racks to cool.
NOTES : Makes about 42 (2 1/2 inch) cookies
