4 cups flour
8 egg yolks
10 ounces vegetable shortening (1 1/4 cup = 300 grams)
14 ounces condensed milk (1 can)
Peel of 1 1/2 orange, finely grated
1/4 teaspoon baking soda
3 ounces powdered sugar about (1/2 cup or so), to coat
1. Preheat oven to 250 F degrees. Any cookie tray will work fine. Oven stone not needed as long as trays are kept above half top of oven.
2. Sieve flour in a large bowl. Forming a hole in the middle add all other ingredients except powdered sugar. Mix well until it forms a soft dough.
3. Using a rolling pin extend the dough to about 1/2 cm. thick. Using a round cookie cutter 2-3- inches in diameter, cut cookies.
4. Place on ungreased cookie sheets.
5. Bake at 250 F to 300 F degrees for about 20- 25 minutes. Cookies cook slowly and should not brown. If cookies are baking too slow, adjust temperature. Cookies are done when they start to show a pale tan on the bottom. Handle cookies carefully, they are very fragile when warm.
6. Immediately out of the oven, roll cookies in powdered sugar. Place single layer on rack or plate to cool. When cookies are have cooled off, roll in powdered sugar a second time.
NOTES : Cookies save well in air tight container.
