1/3 cup molasses
1/4 cup butter
2 cups flour
1/4 cup packed brown sugar
3/4 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon ground cardamon
1/4 teaspoon ground allspice
1/8 teaspoon pepper
1 egg, beaten
1. In large saucepan combine the molasses and butter. Heat and stir over low heat until butter melts. Remove from heat. Cool to room temperature.
2. In a large mixing bowl stir together the flour, born sugar, cinnamon, baking soda, cardamon, allspice and pepper. Set aside.
3. Stir the egg into the molasses mixture. Gradually stir in flour mixture. Transfer the dough to a bowl. Cover and chill about 1 hour or until the dough is easy to handle.
Preheat oven to 350 F degrees.
4. Divide dough into 12 portions. On a lightly floured surface, roll each portion into a 10-inch rope. Cut ropes into 1/2-inch pieces. Place pieces 1/2 inch apart onto ungreased shallow pans.
5. Bake in 350 F degrees oven for 10 to 12 minutes or until edges are firm and bottoms are lightly browned. Remove cookies and cool on paper towels.
VARIATION: Spicy Shortbread Nuggets.
1. In large mixing bowl stir together all ingredients except butter. Using a fork or pastry blender, cut in butter until it resembles fine crumbs. Form mixture into a ball and knead until smooth.
2. Proceed as in step 4 or above recipe, baking at a reduced temperature of 325 F degrees for 12 to 15 minutes.
