1/2 cup vegetable shortening
1/2 cup sugar
1/2 cup powdered sugar
1 whole egg, beaten
1/4 teaspoon salt
1/2 teaspoon cream of tartar
1/2 teaspoon baking soda
1 teaspoon vanilla extract
1 3/4 cups flour
1/2 cup finely chopped pecans
1. In a large bowl mix shortening, sugar and powdered sugar until well blended.
2. Add beaten egg and mix until blended.
3. In a separate bowl combine flour, salt, cream of tartar and baking soda.
4. Add dry ingredients to sugar mixture. Add vanilla and incorporate. Incorporate chopped pecans.
5. Gather all the dough and form a long log about 2" in diameter. Wrap in plastic and refrigerate for 30 to 45 minutes.
About 20 minutes before baking preheat oven to 350 F degrees.
6. Slice the log into about 24 pieces. With each piece form a flattened circle about 1/2" thick.
7. Place circles in lightly greased cookie sheet about 2" apart.
8. Bake at 350 F degrees for 12 to 15 minutes or until center of cookies look no longer wet. These cookies are crispy all throughout, not with soft centers. Cool in cookie sheets for about 15 minutes. remove and cool completely before storing in air tight container.
NOTES : Makes 20 to 24 (1.5-inch) cookies depending on the thickness.
