3 cups all purpose flour
1/3 cup sugar
3/4 cup butter, softened
1/2 teaspoon salt
Filling:
1 1/2 cups sugar
1 1/2 cups corn syrup
3 tablespoons butter, softened
1 1/2 teaspoons vanilla extract
4 whole eggs, slightly beaten
2 1/2 cups chopped pecans
Heat oven to 350 F degrees. Grease jelly roll pan, 15.5x10.5x1 inches.
1. Beat flour, sugar, butter and salt in large bowl on low speed until crumbly. Mixture will be dry.
2. Press firmly in pan. Bake about 20 minutes or until light golden brown.
3. Prepare Filling by mixing all filling ingredients except pecans in a large bowl until well blended. Stir in pecans.
4. Pour filling over baked layer; spread evenly.
5. Bake about 25 minutes or until filling is set. Cool completely. Cut into desired size bars.
Variation:
Individual pecan cups. Bake as directed using silicon muffin tins. Reduce baking time. Makes 24
