2 ounces butter (1/2 stick), melted
3 1/2 ounces Galletas Marias, see note (1)
1 can condensed milk, sweetened (14 oz)
2 whole eggs
1 cup chopped dates (about 6 ounces)
3/4 cup chopped pecans
Preheat oven to 350 F degrees. Select a 9x9- inch square pan, glass of aluminum.
1. Ground Galletas Marias in blender to a fine crumb. Melt butter. If using a glass plate you may melt the butter directly in plate using the microwave.
2. Mix butter and cookie crumbs directly in pan to form a crust at the bottom of pan. Spread evenly. Set aside.
3. In blender, mix at high speed condensed milk and eggs. Mix by hand date and pecan pieces.
4. Pour mixture on top of prepared crust.
5. Bake at 350 F degrees for about 25 minutes or until center fills set when touched. Cake should be golden brown on top. Adjust oven heat if top is browning too fast.
6. Let cool completely. Cut square into about 16 square pieces.
NOTES : 1) "Galletas MarĂas" is a simple dry flat cookie found in Mexican products stores. May use graham cracker crumbs instead.
