Ingredients

2  egg whites

1/2  cup  sugar

2  cups  Corn Flakes

1/2  cup  pecans, chopped

1/2  cup  shredded sweet coconut

1  teaspoon  vanilla extract (optional)

Preheat oven to 350 F degrees. Grease and flour cookies sheets.

 

1. Beat egg whites until they form stiff peaks. Add sugar slowly and continue beating to incorporate. Add  corn flakes, nuts and coconut mixing by hand.

 

2. Place heaped teaspoons of mixture in greased and floured cookie sheet about 1" apart.

 

3. Bake at 350 F degrees for about 10-12 minutes or until they start to brown and become firm. Cookies will harden some as they cool.

 

NOTES : Makes about 30 cookies.
