General Directions:

1. Preheat oven

2. In a medium bowl, using an electric mixer , beat butters, sugars, salt, and vanilla called for your selection. Beat in egg.

3. In a small bowl whisk together the flours and powders. Add  the dry ingredients to wet mixture and mix on low speed just until absorbed. Combine chips and nuts.

4. Drop 1 1/2-inch balls into ungreased cookie sheets and bake as indicated.

 

Makes: number of  ( 2.5" -3")  cookies indicated in table, varies with selection.

NOTES : Chocolate Chip Cookies: Select your mood and bake away.

 1) Classic: soft, chewy, crisp and crunchy all at once. A adaptation from Mrs. Wakefield's original recipe.

 2) Thick and Chewy:soft and chewy centers, crisp edges, cracked tops, and the substantial biteful of a thick cookie. The dough contains less butter than the Classic recipe, which prevents the cookies from spreading too much in the oven.

 3) Thin and Chewy: if you crave a buttery, soft, chewy cookie this one is for you. They puff up in the oven, then collapse as they cool, forming an unevenly wrinkled surface. The dough contains a little extra butter and twice as much brown sugar than white, so they stay soft and chewy.

 4) Crispy and Crunchy: eat this cookies in bed and you end up with crumbs in the sheets. They are more like the packaged cookies sold commercially- fairly thick, crisp, and crunchy, with small cracks across the top. Less egg, extra flour and more white sugar than brown makes them that way.

 5) Dark and chewy with a deep chocolate flavor, these lumpy, bumpy cookies are filled with large pecan pieces and spotted with dark chocolate chunks. Use high quality chocolate bars broken in half-inch irregular pieces.

 6) Oatmeal CCC: crisp and crunchy, these oatmeal cookies are jammed full of nuts and chocolate. For a Classic oatmeal cookie, omit the chips and substitute raisins. Or try adding chocolate cover raisins or dried cranberries.

 7) Peanut Butter CCC: these cookies pack a powerful peanut butter punch, but have the texture and appearance of chocolate chip cookies; not terribly thick, with soft centers and crunchy edges. Add either milk chocolate or semisweet chocolate chunks or chips.
