1 cup butter or margarine, softened
1/2 cup solid vegetable shortening
1 1/3 cups sugar
1 cup brown sugar, firmly packed
4 whole eggs
1 tablespoon vanilla extract
1 teaspoon lemon juice
3 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon cinnamon (optional)
1/2 cup rolled quick oats
24 ounces semisweet chocolate chips
2 cups chopped pecans
Preheat oven to 325 F degrees for soft cookies, to 350 F degrees for crispy cookies.
Grease baking sheets with shortening.
1. Mix butter, shortening and sugars at high speed until very fluffy ( 5 minutes).
2. Add eggs one by one. Beat vanilla and lemon juice.
3. Mix flours and oats and gradually add to butter mixture. Stir chips and nuts.
4. Drop in greased baking sheet approx. 1/4 scant cup of dough 3" apart.
5. Bake as follows:
- For soft cookies: bake 17-19 minutes at 325 F degrees
- For crisp cookies: bake for 16-18 minutes at 350 F degrees
NOTES :1) One half recipe works well for our 4 member family.
