1 2/3 cups flour
1/2 teaspoon each: salt and baking soda
1/2 cup butter, softened
1/2 cup firmly packed brown sugar
1/4 cup granulated sugar
1 whole egg
1/2 teaspoon vanilla extract
1 cup chopped walnuts or pecans, see note (1)
CHOCOLATE FROSTING:
1/4 cup butter
1 ounce unsweetened chocolate (1 square)
2 tablespoons milk
1 1/2 cups powdered sugar
1/2 teaspoon vanilla extract
1. In bowl stir together flour, salt and baking soda to combine thoroughly; set aside.
2. Preheat oven to 375 F degrees.
3. In mixer bowl combine butter, brown and granulated sugars; beat until fluffy and well blended. Beat in egg until fluffy. Add vanilla and mix well.
4. Gradually add flour mixture until just blended. Stir in walnuts.
5. Drop by rounded teaspoons slightly apart onto ungreased baking sheets. With your finger or teaspoon, make a depression in center of each cookie. Bake cookies for 5 minutes. Press depressions down again, then continue baking until cookies are golden brown (4 to 5 minutes).
6. Transfer cookies to wire racks to cool.
7. Chocolate frosting: In top of a double boiler over simmering water, combine butter and chocolate. Heat stirring occasionally, until chocolate melts. Blend in milk. Remove from heat; mix in powdered sugar and vanilla until smooth.
8. Fill centers with frosting, dividing it evenly.
NOTES : 1) Unless you love the flavor of walnuts, use pecans.
