Yogurt - Vanilla

4 cups milk (2% or whole)
1/4 to 1/2 cups sugar
1/2 teaspoon vanilla extract
2 Tablespoons yogurt, unflavored or vanilla. Stonefield brand is my choice.
Microwave oven with temperature robe
Food dryer or oven with control temperature to 115F degrees
Temperature probe
Using a microwave safe glass bowl. Make sure all utensiles are Clean.
Heat 4 cups of milk in microwave using a temperature probe to 190 F degrees.
Immediately remove from mircowave oven.
Add 50 - to -100 grams of sugar ( about 1/4 to 1/2 cup) depending of your sweetness desire, stir to dissolve
Add 1/2 teaspoon vanilla extract, mix well.
Leave milk mixture to cool to 110 - 115 F degrees
Mix in 2 Tablespoons of yogurt, stir well to incorporate.
Pour in clean plastic or glass container.
Using a food dryer or oven with low control temperature, place mixture cover, undisturbed at 115F degrees for 5 hrs.
Place in refrigerator to cool before serving. Keep refrigerated.
NOTE: Always save 2 Tablespoons of fresh yogurt to make a new batch.
If made frequently, make sure that after several batches you start fresh with a store bought starter.
