Bread Pudding
using Stollen
Ingredients
Preparation
4 slices of Stollen (recipe under Breads)
2 whole eggs
1 cup milk
1/2 cup whipping cream,
1/4 cup sugar
1/2 teaspoon cinnamon
2 tablespoons unsalted butter
1/3 cup of raisins or other prefered dry fruit.
In a small oven proof ceramic plate place the slices of bread, add raisins.
Mix in a bowl all remaining ingredients except butter, pour over bread. Liquid should be sufficient to cover bread. Move pieces around to make it so.
Refrigerate cover for 1 hour.
Bake in a water bath at 350 F degrees for about 30-45 minutes, If top is drying too fast, cover loosly with aluminum foil.
Serve warm.
NOTE: Stollen is a very dry sweet bread loaded with dry fruit and almonds. Replacing bread type keep in mind to balance moisture with bread texture. You do not want bread to be soggy.
