4 whole eggs
2 cups sugar
1 cup vegetable oil
16 ounces canned pumpkin, (1 can)
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/2 cup raisins
1/2 cup chopped nuts
1 cup pecan pralines, chopped (optional)
Heat oven to 350 F degrees. Grease a 9" x 13" pan.
1. Beat eggs, sugar, oil and pumpkin. Stir in four, baking powder, cinnamon, baking soda, salt, ginger and cloves.
2. Mix in raisins and nuts. Reserve nuts if bars are to be frosted.
3. Pour batter into pan. Sprinkle with chopped pralines (optional, if no frosting is to be use)
4. Bake until light brown, 25 to 30 minutes. Cool.
5. Optional: frost with Cream Cheese Frosting and sprinkle with nuts.
6. Cut into bars about 2"x 1.5". If frosted, refrigerate remaining bars.
Cream Cheese Frosting: mix cream cheese, butter and vanilla until soft and smooth. Gradually beat in powdered sugar until all incorporated and spreading consistency.
NOTES : 1) Bars are very moist and keep well for several days.
2) Makes a good breakfast cake when sprinkled with pralines and no frosting.
Cream Cheese Frosting:
3 ounces cream cheese (1 small package), softened
1/4 cup butter, softened
1 teaspoon vanilla extract
2 cups powdered sugar
