2/3 cup water
3 medium oranges, peels only (about 1 1/2 cup), cut into 1/2" cubes
3/4 cup sugar
1 1/2 cups all-purpose flour
1/2 cup cake flour
2/3 cup sugar
1/3 cup milk
1/3 cup orange juice
2 tablespoons vegetable oil
1 tablespoon shortening, level
2 teaspoons baking powder
1 large egg
1/2 teaspoon salt
2/3 cup finely chopped pecans
Glaze: Optional (see directions)
1. Heat oven at 325 F degrees (oven stone at lower level O.K.). Grease loaf pan 9x5x3". 2. Place water and orange peels in blender. Cover and blend at medium speed until finely chopped, about 1 minute.
3. Mix orange peel mixture and 3/4 cup sugar in saucepan. Heat to boil. Boil and stir until consistency of applesauce, approx. 10-12 minutes. Cool.
4. Beat orange mixture and remaining ingredients in large mixer bowl on medium speed scraping bowl constantly, 1 minute. Pour into pan.
5. Bake until wooden pick inserted is clean, 50-60 minutes. Cool in pan 10 minutes, remove from pan. Cool completely before slicing.
6. Glaze individual slices: (optional)
1/2 cup powder sugar
1 Tbs. butter
orange juice
For glaze mix ingredients to form a soft spread glaze. Spread jelly like each slice and arrange slices on serving plate. Glaze should dry to the touch.
NOTES : Makes one 9x5x3" loaf.
