ONE:
1 cup sugar
1/2 cup butter or margarine
1 egg
1. To prepare cooked apples mix 3 - 4 Golden delicious apples peeled and sliced with about 1/2 cup of water and approx. 1/2 cup sugar and 1 tsp. cinnamon to boil until tender. Cool completely before mixing with cake batter. Cooked apples freeze well for future cakes.
Pre-heat oven to 350F degrees.
2. Mix set ONE of ingredients until creamy.
3.Add set TWO of ingredients to above, add some milk or juice from cooked apples if the dough is to thick. For a very moist cake use a heaping cup of apple sauce. Apples may remain in soft chunks. Dough should not be runny.
4. Bake at 350F degrees in greased and floured bread loaf pan for approximately 1 hour or until a toothpick comes out dry. Let cake cool for about 1 hr. Remove mold and wrap in aluminum foil. Cake will last good and moist for several days.
For muffins, use one 12 large muffin tin. Grease and flour tin. Bake for about 35 minutes or until tops are puffed, set and golden brown.
NOTES : 1) Cake will not rise much but it will be moist and delicious.
2) Muffing: sprinkle coarse sugar before baking if a crispy top is desired.
3) For "Christmas Cake" add: raisins, nuts, dates, etc. as desired.
4) Cake freezes well.

1 3/4 cups unbleached or all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon powder cinnamon
1/4 teaspoon powder cloves
1 cup cooked golden delicious, 3 - 4 apples
milk, or syrup from cooked apples, as needed
