Cinnamon Rolls
Using "Basic Sweet Dough"
Ingredients
Preparation
1 recipe Basic Sweet Dough
3 tablespoons margarine or unsalted butter, melted
1/2 cup sugar
2 teaspoons ground cinnamon
3/4 cup raisins (Optional)
POWDER SUGAR ICING:
1 cup powder sugar
3 tablespoons butter, melted
2 to 4 tablespoons milk
1. Prepare "Basic Sweet Dough" as directed, about 1 hours before desired shaping time. 2. Grease two 9x1 1/2" round baking pans, or one 9x13" pan.
3. On a lightly floured surface, roll each half of the dough into a 12x8" rectangle. Brush with margarine or butter.
4. In a small mixing bowl stir together sugar and cinnamon. Sprinkle the sugar-cinnamon mixture on top of the dough. If desired, sprinkle with raisins.
5. Roll up each rectangle, jelly-roll style, starting from one of the long sides. Pinch seams to seal.
6. Cut each roll into 10 to 12 pieces. Place pieces, cut side down, in greased baking pans. Cover with plastic and let rise till nearly double, about 30 minutes to 1 hour. ( Or refrigerate for 2 to 24 hours to delay baking. If chilled, let stand covered for 20 minutes at room temperature. Puncture any surface bubbles with greased wooden toothpick.) Preheat oven to 375F degrees.
7. Bake in preheated oven for 20-25 minutes or till rolls test done.(Do not place roll's pan directly on oven stone, but rather one shelf above). While rolls are baking, prepare icing.
POWDER SUGAR ICING:
Blend together powder sugar and butter to a smooth thick paste, adding few drops of milk at a time and blend. Icing will melt as it is applied to warm rolls. Add more milk it thinner icing is desired.
8. Remove rolls from oven. Cool slightly. Spread icing evenly over rolls. Serve warm or cool.
NOTES : Variation: Cinnamon & Apple rolls. Replace raisins with 2 cups finely chopped apple. Add a dash of cinnamon and nutmeg to the icing.
