Stuffed Jalapeño peppers

Ingredients

Preparation

1 dozen  fresh Jalapeño peppers, roasted, peeled -- and seeded

2  to 3 ounces  cream cheese

1  whole  egg, beaten

1/4  cup  flour

1/2  cup  plain bread crumbs

vegetable oil to dip fry

salt and pepper to taste

Salsa of your choice to serve with

1. Roast peppers under the broiler to loosen their skins. Place Hot peppers in a seal bag or covered plate until they cool.

2. Carefully remove peppers skin. Make a slit on the side of each pepper, remove seeds and seed veins careful not to destroy the pepper. Pat dry.

3. Place about 1 to 2 teaspoons of cream cheese inside each pepper and close.

4. Prepare 3 plates: one with flour, second with beaten egg and 2 tablespoons of four mixed into it, salt and pepper to taste, third one with bread crumbs.

5. Dip each pepper into plates one, two and three to coat well each time. Place peppers in a plate, cover with wax paper and refrigerate for 30 minutes or until ready to fry.

6. When ready to serve, heat oil to high, drop peppers in oil and fry until coating is nicely brown and crisp. Remove from oil and serve immediately with a sauce of your choice.
