Tips: Triangles can be frozen before baking.

 Spinach & Cheese Triangles

Spanakopites

Ingredients

Preparation

10  ounces  frozen leaf spinach -- thawed

4  scallions with greens, minced

1/2  cup  minced parsley

1/2  cup  minced dill

1/2  cup  Feta cheese, crumbled

1/4  pound  cream cheese

1/4  pound  farmer cheese

2  tablespoons  Kefalotyri cheese (Krinos brand)  (see note 1)

2  whole  eggs

    pepper to taste

1/2  pound  fillo dough (Krinos brand)

1/2  pound  butter, melted

Preheat oven to 350 F degrees.

 

1. Squeeze spinach dry and chop. Combine with remaining ingredients, except for fillo dough and melted butter. Mix until smooth.

2. Pour mixture into a blender or processor and mix.

3. Unwrap fillo dough and cover with slightly dampened towel. Work with 1 fillo sheet at a time. Brush sheet with melted butter. Cut lengthwise into 5 strips. Fold bottom of strip over 1/3 of itself. Center 1/2 teaspoon of mixture on folded end of strip. Fold end over end to form a triangle shape. Continue folding strip (like folding a flag) until you have formed a triangle shape.

4.  Repeat (3) until all pieces are formed.

5. Arrange triangles 1" apart on buttered, foil-lined baking sheet. Brush with butter and bake in preheated 350F degrees oven for 15 minutes or until golden and puffed.

NOTES : 1) Kefalotyri: a hard sheep's milk cheese. When young and fresh it is a flavorful table cheese. With age, it becomes a sharper cheese ideal for grating.
