Cheese Palm Leaves

Ingredients

Preparation

1 1/2  pounds Puff pastry dough, chilled, see note 1

1 cup Parmesan cheese, grated

1/2  cup Gruyere or Swiss cheese, grated

   cayenne pepper

1 egg whole, for brushing only

 1. Roll chilled dough to make a rectangle about 10-inches wide and 1/8-inch thick. If the rectangle is not uniform, trim the dough with a pastry cutter or sharp knife to make it so.

2. Brush the rectangle of  puff pastry with water.

3. Sprinkle generously with the cheeses (keeping 2 tablespoons in reserve) and a few sprinkles of cayenne pepper.

4. Roll both long sides to meet at the middle. Press firmly together and wrap in foil.

5. Chill for 1 or more hours.

6. Cut the roll into 1/2-inch slices and place on a parchment-lined or Teflon lined baking sheet.

7. Chill for 30 minutes.

8. Bake in a 400F degree oven for 20 minutes. Turn them over with spatula, brush with beaten egg and sprinkle with reserved cheese and cayenne. Bake for an additional 15 minutes, or until puffed and golden.

NOTE (1):  1/2 recipe of Puff pastry "3 minutes"
