Tips: Easy to make for breakfast. Always have a bag of frozen berries to make on a pinch.

For 12 Regular
1/2 cup (8 Tablespoons) butter
1 cup sugar, plus 1/4 cup for topping
2 large eggs
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
2 cups of unbleached all-purpose flour
1/2 cup milk
2 1/2 cups of fresh blueberries or frozen
1.Preheat oven to 375F degrees.
2.Beat together the butter and sugar until well combined. Add eggs one at a time, scraping the sides and bottom of the bowl and beating well after each. Add the baking powder, salt and vanilla.
3.Using a spatula add flour alternately with the milk, beating gently just to combine. Scrape the bottom and sides of the bowl.
4.If using frozen berries, defrost in cold water and drain prior to adding to batter.
5.Add the berries to the batter, stirring until just combined. Be careful not to overmix or the muffins will be dense.
6.Scoop batter by the heaping 1/4 cupful into greased or paper lines 12-cups regular muffin pan*
7.Sprinkle about 1 teaspoon granulated sugar over each muffin. Do not skip this, it is worth it.
8.Bake muffins at 350F degrees for about 25-30 minutes.
* I like to line muffin pan( with square pieces of parchment paper shaped into cups by pressing square into the bottom of muffing cup with a heavy glass prior to scooping batter. These makes the muffins a bit more elegant. Regular muffin size = 12 cups pan
NOTES : 1) Described as Famous Department store muffins, I can not tell which store, however, they are great loaded with lots of fresh berries.
2) Recipe works as well using frozen blueberries defrosted in cold water and drained prior to mixing into batter.
