  Leek Soup - Clear Broth

Clear Broth Style

Ingredients

Preparation

2  leeks

2  medium  potatoes

2  tablespoons  butter

4  cups  chicken broth

salt and pepper to taste

1.  Cut roots end and some of the green stalk off leeks. Using a sharp knife, cut leeks in half lengthwise and then in half again. Chop stalks into about 3/4" squares. Place pieces in a colander and rinse well.

2.  Peel and chop potatoes into 1/2" squares.

3. In medium size  pot heat butter to melt, add leeks and potatoes and cook over medium heat for about 5 minutes. Add broth and simmer for about 30 minutes until potatoes are soft.

4.  Adjust salt and pepper to taste.
