  Leek-Potato Soup - Creamy

Ingredients

4  tablespoons  butter or olive oil

4  tablespoons  flour

2  large cloves  garlic, minced

30  ounces  can chicken broth

2   cups  milk

1/2  cup   whipping cream, (Optional)

2   red potatoes,  peeled and grated

4   red potatoes, chopped into 1/2" squares

2   leeks,  washed and chopped

1. In large pot, heat butter or oil, add flour and minced garlic. Brown. Pour chicken stock, milk and cream whisk and heat until it thickens.

 

2. Add potatoes and leeks, cook at low heat until potatoes are done, about 30 minutes. Add salt and pepper to taste.

 

Cream thick soup for a winter day.
