Tips:  Do not use frozen spinach, it gets soggy.

Hearty White Bean Soup

Ingredients

Preparation

2  cups   northern  or other white type bean, dry,  see note (1)

2  tablespoons  olive oil

1  medium   onion

2  large  fresh or canned tomatoes, chopped

8  ounces  V-8  vegetable juice, (optional)

4  ounces  Spanish type chorizo and/or ham, chopped

1/2  head  cabbage

water, salt and pepper to taste

1  bay leaf

1  large  bunch fresh spinach, optional,  remove stems

1. Soak dry beans overnight in cold water. Rinse and drain.

2. In large pot place beans and about 8 cups water. Cook beans for about 1 hour.

3. In the mean time,  heat olive oil in a pan. Add chorizo and or ham and cook for about 3 minutes. Add chopped onions, cook about 3 minutes.

4. Add meats- onion mixture , and remaining ingredients to the pot of cooking beans. Continue to simmer until beans are soft.

5.  Add fresh spinach just before serving. Spinach may be added to individual bowls before serving.

NOTE: 1) Cooking time for beans will vary depending on the size and whether they were soak in water or not. Total cooking time is about 2-3 hours if beans are not soaked.
