Garlic Red Snapper

Ingredients

2  whole  red snappers, about 5 lbs. total

2  heads  garlics

1  cup  flour

2  cups  vegetable oil

     

1   large  frying pan

1.  Clean, rinse and pat dry whole snappers heads and tails included.

2. Using a sharp knife make 3 to 4 slanted slits on the side of each fish, both sides.

3. Chop garlic heads, not too fine.

4. Stuff garlic pieces into each slit of the fish. Dust fish heavily with flour to coat completely.

5. Heat oil at high heat. When oil is very hot, place fish in oil and cook until crispy and cooked through 1/2 the fish thickness. Turn and cook through.

6. Remove from oil, place in paper towels momentarily to soak extra oil. Serve immediately
