Makes 2 (10 inch) pizzas


Preparation time: 1 hours


Tips: A fast dough preparation with minimun rise time. It can be ready in about 1 to 1-1/2 hr.

Preparation

For the Dough: (Makes 2 (10-inch) pizzas

3/4 cup lukewarm water

1 traspoon active dry yeast

2 cups All-purpose flour, plus more to kneading

3/4 teaspoon salt

2 teaspoons olive oil, divided to top of pizza crust before baking.


For the Sauce: (Makes 4 cups, 1/2 cup per pizza needed)

Mix all ingredients in a blender, freeze remaining for later use.


4 cloves of garlic, coarsely chopped

1(14.5 ounce) can whole or diced tomatoes

2 Tablespoons olive oil

1 teaspoon sugar

1 teaspoon balsamic vinegar, plus more to taste

3/4 teaspoon salt

Freshly ground black pepper

  1. 1.Arrange a rack  with baking stone in the bottom third of the oven, and heat oven to 500F degrees.

  2. 2.Pour water in a medium bowl. Sprinkle the yeast over the water and let stand until yeast is dissolved and foamy, 3 to 5 minutes.

  3. 3.Add flour and salt. Mix with spoon or spatula until a shaggy dough forms. Turn dough into a work surface until it forms a smooth, slightly sticky tacky ball that springs back when you poke it, 5 to 8 minutes. If the dough sticks to you hands, add more flour. Avoid adding too much flour.

  4. 4.Cover dough with a kitchen towel and let sit while you prepare the pizza toppings, about 10 minutes.

  5. 5.Divide the dough into 2 equal portions. Stretch each portion into a 10-12 inch circle. You may use a rolling pin or your hands, leaving a slightly thicker border all around. Brush each circle with 1 teaspoon olive oil. Spread between 1/4 to 1/2 cup sauce. Sprinkle with cheese and toppings.

  6. 6.Bake @ 500F degrees for 8- 10 minutes.


Topping Suggestions:

  1. -Pesto sauce (2-3 ounces), Red sauce fresh tomato, canned tomato or Classic Traditional

  2. -4 onces fresh mozzarella in slices. About 6-8 slices

  3. -1 onces of sundried tomatoes, soaked in water for few minutes.

  4. -10 large shrimp peeled and whole

  5. -1 Tablespoon capers

  6. -4 anchovies fillets in pieces.

- Caramelized onions (about 1 large onion before cooked)

  1. -Prosciutto ( about 4 slices), add to pizza during last 4 minutes of baking

  2. -Fresh basil leaves, immediately when pizza out of the oven.

  3. -Fresh avocado pieces, immediately when pizza out of the oven.

NOTE: 2 pizzas is plenty for 2 adults and few pieces left over for lunch.

      Pizzas
