Pate Brisee

1 1/4 cup flour

6 Tablespoons unsalted butter, (3/4 stick) cut into 1/2 inch pieces

2 Tablespoons vegetable shortening (Crisco)

1/4 teaspoon salt

3 Tablespoons ice cold water

Put flour and salt into a  mixer bowl, add butter pieces and shortening. Turn mixer pulsating on/off 4 to 5 times.

Pouring ice cold water into the bowl, pulsate again on/off for about 5-6 times. Dough should begin to hold together. If too dry, add 1/2 Tablespoon more of ice water, repeat if necessay. Do not over work the dough.


Chill at least 1 hour and preferably 2 hours. Dough freezes well.


Makes one crust. Ready to bake.

NOTE: Good crust for fruit tarts.
