Dirty Rice

Multi- type rice with curry kick

Ingredients

Preparation

1/2 cup of mix brown whole grain rice.

1 teaspoon salt

1 Tablespoon butter

1 cups water to cook rice, increase water amount if wild rice added. Follow package cooking instructions.


To saute separately:

1 Tablespoon butter

2 large  fresh mushroons, chopped fine

1/4 cup onion, finely chopped

1 celery stalk and leaves, chopped fine

2 Tablespoons pine nuts or chopped almond slives or slices

1 teaspoon curry powder, more to taste.

2 Tablespoons of light color raisins

Salt & black pepper to taste

  1. 1.In a saucepan, place rice, water and 1 tablespoon butter. Cover, bring to boil. Reduce heat, cover and simmer for about 50 minutes until all water is absorbed and the rice is soft and fully cooked.

  2. 2.In a saute pan, melt butter, add all vegetables and satue until soft.

  3. 3.10 minutes before serving, cooked rice to vegetables, sprinkly with curry powder, salt and pepper. Add about 1-2 tablespoons of water if mixture is dry. Toss well to incorporate spices. Cover and heat.

  4. 4.Serve immediately.
