Ingredients

Preparation

1  package  yellow cake mix

10  teaspoons  water

2 1/2  teaspoons  powdered unflavored gelatin

2 1/2  cups   whipping cream

3  tablespoons  sugar

1  teaspoon   vanilla extract

1  pound  fresh strawberries, approximately

Few tablespoons of sugar

1. Mix and bake cake as in  box directions using  a 9x5 loaf pan or 4 1/2" x 13". Do NOT  fill pan above 3/4 of rim, you should have enough remaining batter to bake 4 cup cakes or 1 mini (3"x5") bread loaf.

2. Cool completely.

 

While cakes cool,  prepare "Super-Stabilized Whipped cream" and strawberries:

 

3. In a small bowl combine 10 tsp. water with 2 1/2 tsp. powdered unflavored gelatin, heat in microwave for few second to dissolve, stirring once or twice. Cool at room temperature (about 7 minutes). Mixture should still be liquid.

4. Combine 2 1/2 cups whipping cream and 3 Tablespoons sugar in mixer bowl. Beat until traces of beaters begin to show distinctly. Add the gelatin mixture in a steady stream. beating constantly. Add 1 tsp. vanilla and beat just until stiff peaks form when beater is raised. Cream will maintain it's shape for piping and decorations for 2 days. Always refrigerate.

5. If strawberries proven to be very sweet eliminate the sugar. Reserving few whole for top decoration, slice strawberries lengthwise and sprinkle with few tablespoons of sugar. Set aside.

6. Split  loaf cake in 4 even layers.

7. Fill each layer with "Super-Stabilized  Whipped Cream" and the strawberries slices. Reserve some cream for the top.

8. Use remaining cream to cover top of cake and pipe rosettes or desired design. Place few whole fresh strawberries in  the middle for decoration.

9. Chill cake before serving, preferably overnight. Keep refrigerated.

NOTES : 1) Betty Crocker's brand cake mix preferred since it does not crumble when split to layers.

2) Super-Stabilized Whipped cream will maintain it's shape for 2 days. Refrigerate.
